Christstollen

A Stollen is a fruit cake containing dried fruit and often marzipan and covered with sugar, powdered sugar or icing sugar. The cake is usually made with chopped candied fruit and/or dried fruit, nuts and spices. Stollen is a traditional German cake, usually eaten during the Christmas season, when it is called Weihnachtsstollen or Christstollen.

400 grams of flour
20 grams of fresh yeast
150 milliliters of milk
100 grams of sugar
20 grams of icing sugar (or powdered sugar)
8-10 grams of vanilla sugar
1/2 teaspoon of salt
1 teaspoon of cinnamon powder
1/2 teaspoon of nutmeg powder
150 grams of butter
100 grams of candied orange peel
100 grams of candied lemon peel
100 grams of raisin
100 grams of grated almond
