Sambal tumpang

Sambal tumpang is a Javanese sambal with tempeh. Tempe or tempeh is an Indonesian soybean cake. In order making sambal tumpang, you need tempe semangit. Tempe semangit can be categorized as an old or rotten tempe.

2-3 pieces of tofu (bean curd)
400 grams of tempeh
350-400 grams of beef
100 grams of beef rind crackers (substitute: pork rind crackers)
15 stinky beans
1 onion or red onion (or purple onion)
2-3 garlic cloves
2-3 centimeters of kencur (or kaempferia galanga or aromatic ginger)
chili peppers, at will
1-2 large red chili peppers
3-4 teaspoons of salt
2 centimeters of galangal
2 Indonesian bay leaves (daun salam) (substitute: bay leaves)
3-5 kaffir lime leaves
1-2 tablespoons of grated palm sugar
300 milliliters of coconut milk
cooking oil, for deep-frying
