Pho bo

Pho bo is a Vietnamese noodle soup consisting of broth, linguine-shaped rice noodles, a few herbs, and beef. It is a popular street food in Vietnam and the specialty of a number of restaurant chains around the world. The Hanoi and Saigon styles of pho bo differ by noodle width, sweetness of broth, and choice of herbs.

1/2-1 kilogram of beef bone
300-500 grams of beef sirloin or beef tenderloin
2 onions
3 centimeters of ginger
5 star anise
3-5 cloves
1 cinnamon stick
2 tablespoons of salt
1 tablespoon of sugar
2-3 tablespoons of fish sauce
1-3 limes
red chili peppers, at will
250-300 grams of rice noodles
100 grams of soybean sprouts
coriander leaves (or cilantro)
Thai basil leaves (bai horapa)
hoisin sauce (Chinese dipping sauce)
