Kimchi

Kimchi is a traditional fermented Korean side dish made of vegetables with a variety of seasonings. It is often described as "spicy" or "sour". It is Korea's national dish, and there are hundreds of varieties made with a main vegetable ingredient such as napa cabbage, radish, scallion, or cucumber. Kimchi is also a main ingredient for many Korean dishes such as kimchi stew, kimchi pancake, kimchi soup and kimchi fried rice.

Ingredients

1-2 napa cabbages
1 pear
1 piece of radish
1 onion
3-4 garlic cloves
2-3 centimeters of ginger
chili flakes (or red pepper flakes), at will
150 grams of salt
2 teaspoons of sugar
1-2 tablespoons of corn starch (or maize starch) or glutinous rice flour
100 milliliters of fish sauce
2-4 tablespoons of sesame oil
