Ingredients

800-1000 grams of snapper steak
1/2-1 stalk of leek
1/2-1 fennel bulb
2-3 celery stalks
1 tablespoon of butter
250-300 milliliters of white wine
4-5 liters of water
1/2 teaspoon of peppercorn
1/2 teaspoon of dried juniper berry
2-3 bay leaves
1-2 garlic cloves
2-3 sprigs of thyme leaves
1-1,5 tablespoon of salt
