Bubur ayam

Bubur ayam is an Indonesian chicken congee. It is rice congee with shredded chicken meat served with some condiments, such as chopped scallion, crispy fried shallot, celery, both salty and sweet soy sauce, and sometimes it is topped with yellow chicken broth and kerupuk (Indonesian style crackers).

1 chicken breast
200 grams of rice
2 liters of chicken broth
2 onions
4 garlic cloves
1 tablespoon of coriander seed powder
5 candlenuts (substitute: almonds)
2-3 bay leaves (original: Indonesian bay leaves (daun salam))
2 stalks of lemon grass
2 centimeters of galangal
1 teaspoon of turmeric powder
1/2-1 teaspoon of nutmeg powder
1,5 tablespoon of salt
1/2 teaspoon of pepper powder
chopped parsley, at will
fried onion (or fried shallot), at will
youtiao (or Chinese doughnut or fried breadstick), optional
chili sauce (or pepper sauce), optional
cooking oil, for deep-frying
